Ingredients

  • 450 gr of pasta (eg tagliatelle or spaghetti)
  • 400 g of mussels (fresh or thawed)
  • 120 ml of white dry wine
  • a bunch of basil
  • 2 tablespoons balsamic vinegar
  • 1-2 cloves of garlic
  • olive oil
  • salt, pepper to taste

Recipe for cooking at home

Frozen mussels must be defrosted beforehand and drained of all liquid.

  • On the tomatoes make shallow incisions and put the fruits in boiling water. After a minute, put the tomatoes in ice water and allow them to cool. & Nbsp; Remove the skin from the cooled fruit and cut the flesh into small cubes, optionally blend it with a blender.
  • Paste the pasta in a saucepan with boiling salted water and cook until almost ready (1-2 minutes less than indicated on the package). The pasta should be cooked to the aldente state (a little hard inside).
  • The basil is washed and the leaves are separated from the stems, the latter finely chopped. Garlic clean and cut into thin plates.
  • Heat 3 tbsp in a frying pan. vegetable oil and fry it on a low heat garlic with stems of basil (0,5-1 minutes). Then add the mussels to the pan, pour in the white wine, increase the heat and bring the liquid to a boil. Stir the mussels for about 2-3 minutes on medium heat. Then pour the vinegar, add crushed tomatoes and mix again. Stew for about 3-5 minutes on low heat, stirring occasionally.
  • Wash basil leaves and finely chop. Salt and pepper mussels in tomato sauce to taste, add the paste, pour 4 tablespoons. water, in which the pasta was cooked and stirred.
  • Cook pasta with mussels over medium heat for 1-2 minutes. Next, send the ground basil leaves, stir and remove from heat. Cover the frying pan with a lid and allow the dish to steep for 10-15 minutes.
  • Serve the pasta with mussels and tomatoes to the hot table. Bon appetit!
