- 1.25 kg of fish ridges, abdomen, heads and fins

- 3 bay leaves

Recipe for cooking at home
- Cut the fish trimmings, put in a saucepan and pour 2.5 liters of water. Peel the onion and add to the fish (do not cut it). Put the pan on the fire, bring to a boil, put the bulb and lower the fire. Boil the broth on low heat for about an hour. Remove the broth from the fire, add salt, pepper, add finely chopped herbs, bay leaf and cover with a lid for 20 minutes.
