Dough for apple cakes:

  • 250 ml of natural yogurt without additives (can be replaced with fat kefir)
  • 150 gr flour
  • 100 grams of sugar
  • 80 ml of vegetable oil
  • 1 egg
  • 1,5 tsp baking powder
  • pinch of vanillin

Apple filling for cupcakes: 400 grams of apples

  • 3 tbsp. lemon juice
  • 2 tsp. of ground cinnamon

Nut stuffing for cupcakes:

  • 75 g of sugar
  • 50 gr flour
  • 50 g of butter
  • 40 gr walnuts
  • 1 tsp. cinnamon

Recipe for cooking at home

  1. First, prepare the nut for the apple cakes. To do this, grind the oil with flour, cinnamon and sugar, peel the nuts and traverse them with a rolling pin. Combine the nuts with the dough and mix thoroughly. Send the mixture to the refrigerator while preparing the remaining ingredients.
  2. Peel the apples from the peel, seeds and cut the pulp in small cubes. Fold the apples in a small bowl, pour the lemon juice and mix thoroughly. Add the flour, baking powder and cinnamon to the apples, mix thoroughly, so that the dry mass evenly covers the apples.
  3. In a separate bowl, beat the eggs and start whipping them with a mixer at a low speed or whisk. Gradually add sugar, continue to beat for another half a minute before it dissolves. Then, without stopping whipping, pour in the vegetable oil and yogurt.
  4. Pour the entire homogeneous liquid mass into apples with flour and mix everything thoroughly. Oven to warm up to 180 / 200C, molds for cupcakes to grease with oil (silicone forms should not be lubricated). Put the dough with the apples in the pieces and put them on the baking sheet.
  5. Sprinkle the cupcakes with the nut mixture. Bake cupcakes with apples for up to 40 minutes at this temperature. Then take out the baking tray, leave it to cool for 10-15 minutes. Then take the slightly warm apple muffins out of the molds and serve warm to the tea. Bon appetit!
